A perfect way to use up roast chicken, leftover turkey, in a low fat white chicken chili

Ingredients

  • 1 tbsp light olive oil
  • 1 cup / 1 small white onion, diced
  • 2 tsp / 4 large garlic cloves, minced
  • 1 lb chicken, cooked & diced (or turkey)
  • 4 oz can chopped green chilis
  • 2 x 15 oz cans white beans, rinsed
  • 1 Southwest Fiesta blend
  • 1/2 tsp salt
  • 4 cups / 32 fl oz chicken broth
  • 1 cup water
  • to serve: optional toppings of sour cream, cilantro, tortilla chips crumbled on top

Instructions

  1. Slow Cook: 1) heat oil in a skillet & sauté the onions & garlic for 2 minutes 2) add the onion mixture to the cooker 3) stir in the chicken, green chilis, white beans, Southwest Fiesta blend, salt, broth, and water 4) cover & cook on LOW: 7 hours or HIGH: 2 1/2 - 3 hours
  2. Pressure Cook: 1) Heat the oil on sauté function; sauté the onions & garlic for 2 minutes 2) stir in the chicken, green chilis, white beans, Southwest Fiesta blend, salt, broth, and water 3) Secure the cooker lid, seal pressure valve; cook on Manual / Pressure for 10 minutes
 4) Vent with Quick Pressure Release

Tips

Substitute fresh, uncooked diced turkey or chicken meat and increase the pressure cook time to 12 minutes on manual pressure
