Tangy Southwestern Salmon Tacos with Salsa

Ingredients

  • 1 tbsp olive oil
  • 1 lime, juiced
  • Southwest Fiesta blend
  • 1 lb salmon fillet, thick pieces
  • 1 cup water
  • To serve: corn tortilla, avocado, sour cream, & salsa

Instructions

  1. Slow Cook: 1) in a small bowl mix the olive oil, lime juice, Southwest Fiesta blend: rub the mixture onto the salmon pieces 2) add water to cooker & add pieces of salmon 3) Cover & cook on LOW: 3 hours or HIGH:1 1/2 hours 4) remove salmon & flake pieces using a fork 5) spread each tortilla with avocado, add the salmon, top with the salsa
  2. Pressure Cook: 1) in a small bowl mix the olive oil, lime juice, Southwest Fiesta blend: rub the mixture onto the salmon pieces 2) add water to cooker 3) Add trivet to cooker and lay pieces of salmon on top 4) Secure the cooker lid, seal pressure valve; cook on Manual/Pressure for 3 minutes 5) Vent with Quick Pressure Release 6) remove salmon & flake pieces using a fork 5) spread each tortilla with avocado, add the salmon, top with the salsa

Quick Homemade Mango Salsa:
1 small mango, diced
¼ cup cilantro, chopped
¼ cup red onion, chopped
¼ cup red/green peppers, chopped
pinch cayenne
lime, juiced
