A comforting herbed sausage, lentil and tomato dish

Ingredients

  • 2 tbsp light olive oil
  • 1 lb vegetarian sausages
  • 1 cup (1 small) onion, diced
  • 1 cup (2 medium) carrots, diced
  • 1 cup (2) celery ribs, diced
  • 2 tsp (4 cloves) garlic, minced
  • 14 oz can tomatoes, diced
  • 15 oz can brown or green lentils, drained*
  • Provençale blend
  • 1/2 tsp salt
  • 1 cup (8 fl oz) water

Instructions

  1. Slow Cook: 1) Heat the oil in a medium sized skillet; brown the sausages for 2 minutes moving around the pan then push to one side. 2) Add the onion, carrot, celery, and garlic and sauté for 2-3 minutes. 3) Transfer mixture to the cooker. 4) Stir in the tomatoes, lentils, Provençale blend, salt, & water. 5) Cover & cook on LOW: 7 hours or HIGH: 3 hours.
  2. Pressure Cook: 1) Heat oil on sauté function; brown the sausages for 2 minutes moving around the pot then push to one side 2) Add the onion, carrot, celery, and garlic and sauté for 2-3 minutes. 3) Stir in the tomatoes, lentils, Provençale blend, salt, & water. 4) Secure the cooker lid, seal pressure valve; cook on Manual/Pressure for 10 minutes. 5) Vent with Quick Pressure Release.

Tips

* substitute canned lentils for 1 cup dried brown or green 1) rinse lentils 2) add to pot in the recipe above 3) increase water volume from 1 cup to 2 cups
