A six vegetable tagine with sweet & savory spice flavors of Morocco.

Ingredients

  • 2 tsp (4 cloves) garlic, minced
  • 1-½ cups (1 medium) white onion, diced
  • 3 large carrots, chopped 1” pieces
  • ½ cauliflower, broken up into florets
  • 2 sweet potatoes, chopped 1” pieces
  • 2 cups squash, chopped 1” pieces
  • 2 zucchini, sliced 1” rounds
  • ½ cup green olives, green
  • ½ cup raisins
  • 15 oz can garbanzo beans
  • 1/2 tsp salt
  • 2 cups (16 fl oz) vegetable broth
  • Moroccan Tagine blend
  • To serve: 2 cups couscous, steamed

Instructions

  1. Slow Cook: 1) Combine the garlic, onion, carrots, cauliflower, sweet potatoes, squash, zucchini, olives, raisins, garbanzo beans, salt & vegetable broth in the cooker. 2) Tuck the unopened spice bag into the mixture and leave to steep. 3) Cover and cook on LOW: 4-5 hours or HIGH: 2½ for hours. 4) Discard spice bag after cooking.
  2. Pressure Cook: 1) Combine the garlic, onion, carrots, cauliflower, sweet potatoes, squash, zucchini, olives, raisins, garbanzo beans, salt & vegetable broth in the cooker. 2) Tuck the unopened spice bag into the mixture and leave to steep. 3) Secure the cooker lid, seal pressure valve; cook on Manual/Pressure for 10 minutes. 4) Vent with Quick Pressure release. 5) Discard spice bag after cooking.
