A six vegetable tagine with sweet & savory spice flavors of Morocco.

Ingredients

  • 1-½ cups (1 medium) white onion, diced
  • 2 tsp (4 cloves) garlic, minced
  • 1 1/2 cups (12 fl oz) vegetable broth
  • Moroccan Tagine blend
  • 2 large carrots, chopped 1" pieces
  • ½ cauliflower, broken up into florets
  • 2 cups (10oz or 5" x 2") sweet potato, chopped 1" pieces
  • 2 cups squash, chopped 1" pieces
  • 2 cups (2 medium) zucchini, sliced 1" rounds
  • ½ cup green olives
  • ½ cup raisins
  • 15 oz can garbanzo beans, rinsed & drained
  • 1/2 tsp salt
  • To serve: 2 cups couscous, steamed

Instructions

  1. Slow Cook: 1) Combine the onion, garlic 2) stir in the vegetable broth and tuck the unopened spice bag into the mixture 3) add the carrots, cauliflower, sweet potato, squash, zucchini, olives, raisins, garbanzo beans, & salt in the cooker 4) Cover and cook on LOW: 4-5 hours or HIGH: 2½ for hours. 4) Discard spice bag after cooking.
  2. Pressure Cook: 1) Combine the onion, garlic 2) stir in the vegetable broth and tuck the unopened spice bag into the mixture 3) add the carrots, cauliflower, sweet potato, squash, zucchini, olives, raisins, garbanzo beans, & salt in the cooker 4) Secure the cooker lid, seal pressure valve; cook on Manual/Pressure for 8 minutes. 4) Vent with Quick Pressure release. 5) Discard spice bag after cooking.
