Instant Pot Penne, With Artichokes, Parmesan, and Greens

Quick creamy vegetable pasta with lemon


  • 2 tbsp olive oil
  • 1 1/2 cups (1 medium) onion, sliced half moons
  • 1 tsp (2 cloves) garlic, sliced
  • 15 oz can artichokes, drained
  • 1 Coq au Vin blend
  • 12 oz penne pasta
  • 4 cups vegetable broth
  • 2 cups spinach, or other greens, chopped
  • 1 cup sour cream
  • 1 lemon, juiced & zested
  • 1 cup parmesan, shredded


  1. Pressure Cook: 1) Heat oil in cooker on sauté function; sauté onion for 2 minutes 2) turn off and stir in garlic, artichokes, Coq au Vin blend 3) add pasta and broth, do not over-stir 4) secure the cooker lid & set pressure valve to Sealing 5) cook on Manual/Pressure for 5 minutes 6) Quick Pressure Release, remove lid and stir in spinach, sour cream, and lemon 6) serve with a generous helping of parmesan cheese, sprinkled with lemon zest


substitute spinach for other greens such as kale, and sour cream for yogurt, creme fraiche, or cream

Parmesan can be substituted for Pecorino for a vegetarian alternative
